Ingredients:
2 1/4 cups of all-purpose flour
2 teaspoons of ground ginger
1 teaspoon of ground cinnamon
1/2 teaspoon of ground cloves
1 teaspoon of baking soda
1/4 teaspoon of salt
3/4 cup of unsalted butter, softened
1 cup of granulated sugar
1/4 cup of molasses
1 egg
2 tablespoons of finely grated fresh ginger
1/2 cup of crystallized ginger, chopped
Instructions:
Preheat your oven to 350°F (175°C).
In a bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt.
In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the molasses, egg, and fresh ginger.
Gradually mix the dry ingredients into the wet ingredients until well combined.
Stir in the chopped crystallized ginger.
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Space them about 2 inches apart.
